Why BMC hygiene decides the grade of milk
India produced 247.87 million tonnes of milk in 2024-25 [1]. Most of it passes through a village BMC or a cluster chilling centre before it reaches a plant. A BMC that is not cleaned after each lift leaves a film of fat and protein on the walls, the agitator and the outlet valve. Bacteria grow in that film and seed the next batch, so the milk arrives with a higher bacterial count and a shorter MBRT.
FSSAI Schedule 4 asks licensed milk businesses to clean equipment to a verified and documented cleaning programme, and to cool raw milk to 4 °C or lower as soon as practicable [3]. A clean BMC does both jobs: it cools faster and it does not add bacteria.
The daily BMC cleaning cycle
This sequence follows the NDDB standard operating procedure for BMCs [2]. Use the INNOVA product dose and temperature given on its technical data sheet (TDS).
| Step | What to do | INNOVA product |
|---|---|---|
| 1. Rinse | Right after the milk is pumped out, rinse the tank and balance tank with lukewarm water (about 50 °C, NDDB). | Water |
| 2. Detergent wash | Scrub by hand, or circulate the detergent in CIP-equipped BMCs, including the agitator, outlet valve, pump and pipe. | INNOVA CanClean (daily cleaner cum sanitiser) |
| 3. Rinse | Rinse with warm water until the drained water is neutral pH. | Water |
| 4. Sanitise | Spray or circulate a cold sanitiser before the next milk. | INNOVA PAA 15 (no rinse) |
| 5. Acid wash (regular) | After the detergent step, wash with an acid cleaner to remove milkstone. More often with hard water. | INNOVA CIP Descale |
Manual BMCs and CIP-equipped BMCs
In a manual BMC the operator scrubs the tank and the balance tank with a soft brush and detergent, then dismantles the pump, valves and pipe for hand washing [2]. In a CIP-equipped BMC the detergent solution is prepared in hot water at 60 to 70 °C in the balance tank and circulated for about 15 minutes, followed by a hot water rinse and a neutral-pH check [2]. Both need the same final step: a sanitiser just before the next milk.
How to check that the BMC is clean
- Visual: no white or yellow film on the walls, the agitator blade or the outlet valve.
- Smell: no sour or cheesy smell after the final rinse.
- Rinse water pH: the last rinse runs neutral, so no detergent is left behind.
- Milk tests: MBRT and bacterial counts on the milk leaving the centre stay steady from day to day.
Common mistakes
- Rinsing with hot water only. Heat alone bakes protein onto steel.
- Skipping the acid wash. Calcium and protein build up as milkstone, which a detergent cannot remove.
- Guessing the dilution. Too weak leaves soil; too strong wastes chemical and needs more rinsing.
- Leaving the condenser dirty. NDDB advises cleaning it every 10 to 15 days, more often in dusty areas [2]. A dirty condenser makes the cooler work harder and cool slower.

Quick answers
How often should a BMC be cleaned?
After every milk lift. NDDB advises rinsing the tank and balance tank immediately after the milk is pumped into the tanker, and cleaning again whenever contamination is suspected.
How often should a BMC be acid washed?
Regularly, after the alkaline step. Hard water needs more frequent acid washes, because calcium in the water builds milkstone faster. A dairy review recommends more frequent acid washing where water hardness is above 100 mg/L as calcium carbonate.
What is the best chemical for bulk milk cooler cleaning?
A dairy detergent for the daily wash, an acid cleaner for milkstone, and a no-rinse sanitiser before the next milk. In the INNOVA range these are CanClean, CIP Descale and PAA 15.
Can I clean a BMC without hot water?
Use a cleaner made to work at low temperature and finish with a cold, no-rinse sanitiser such as INNOVA PAA 15. Lukewarm water for the first rinse still helps remove fat.
