Milk quality is decided at the collection centre, not the plant
Why cans, bulk milk coolers and chillers set the MBRT of raw milk, and the simple hygiene habits that protect it. With references to the NDDB Dairy Knowledge Portal.
A dairy can run a spotless plant and still receive poor milk. By the time a tanker reaches the gate, the milk's bacterial load has already been shaped by the cans, the bulk milk cooler and the pipes at the village collection point.
What MBRT tells you
The methylene blue reduction test is one of the most common platform tests for raw milk in India. Bacteria in milk use up oxygen, and as they do, the blue dye fades. The NDDB Dairy Knowledge Portal explains how the time taken to decolourise is used to grade raw milk quality [1]. A short MBRT time means a high bacterial load.
Where the bacteria come from
Milk soil left behind after a collection round is food for bacteria. It hides in the places people do not see:
- The inside walls and shoulders of aluminium cans.
- Chiller plates and dump-tank pipelines in MCCs.
- Bends and valves in bulk milk cooler outlets.
Hard water makes it worse. Minerals build a film that traps soil, and every round adds another layer.
What works at a collection centre
Most collection centres share three limits: no hot water, operators who were never trained on chemicals, and very little time between rounds. So the programme has to be built around them.
- A cleaner that works cold. A cleaner cum sanitiser for bulk milk coolers, and a peracetic acid sanitiser that needs no hot water and no rinse.
- Soft-metal-safe chemistry for cans. Aluminium cans pit and blacken under the wrong alkali.
- A one-page SOP in the local language. Laminated at the centre, with a measuring beaker, so the dose is the same every day.
- Feedback. Visual checks and ATP swabs, with consumption tracked month on month.
